Post Calcutta run – Super green smoothie – starter veggie smoothie
This tastes like a healthy mojito. Great kick start if feeling a bit sluggish of a morning or lovely after some exercise. You can play around with the recipe. Add half water, half apple juice too. Try kale (remove stalks). Smoothies contain natural sugar but still sugar so don’t drink huge glasses of them. And one a day is plenty.
Serves 5-6 small glasses
1 avocado (must be ripe)
800ml -1 litre glass of chilled apple juice (buy the pressed juice, not from concentrate)
a handful of Mint leaves
Juice of 1-2 limes
Large Handful of baby spinach leaves
Put all the ingredients in a tall jug or blender and mix until smooth. Taste as you may need to add more lime or mint. If it is very thick add more juice or some cold water and blend again.
